  • Cooking with Tess – Copycat Cinnabon® Cinnamon Rolls, Basque Burnt Cheesecake, & Hot Cocoa Bombs

    Escape to the Mediterranean with the flavors of Greece and get your “OPPA” on! During this fun-filled virtual cook-along class you will learn the secrets of creating a lavish dish called “Pastitsio”, and a divine Greek dessert called “Galaktoboureko”, both of which are enjoyed by Greek families around the world, especially during holiday celebrations. Pastitsio, pronounced pas-TI-tsi-o, is a delicacy in its own right; it is a culmination of layered Greek pasta, savory spiced meat sauce, and a topping of often “mile high” cheesy béchamel sauce, baked to perfection. Galaktoboureko, is a gourmet dessert made with a thick luscious Greek custard, wrapped in phyllo pastry, and bathed in a dreamy syrup. Greek gourmet at its finest. Cook-along option: Participants are encouraged to cook along with Tess and create the Pastitsio from scratch during the class. Demonstration: Tess will be demonstrating the creation of the Galaktoboureko. Both dishes require a lot of work and prep, and both require baking in the oven; too much for participants to take on for such a class. Both recipes however will be included in the packet. Tess’ step-by-step cooking instruction is unique and flexible as she is able to support people at all levels of cooking experience to learn with each step, and each little bit of advice and instruction. Participants will receive a list of ingredients in advance of the class with enough time for shopping and prep. A professionally made PDF packet of the instructor’s personal recipes from this class will also be received. Note: The instructor’s recipes are copyrighted and are only shared with those who register for this class. This class will take place on Zoom, free on-line software. Participants will receive instructions on how to access the class prior to it starting. As an added bonus, the instructor has created a private group and a public group on Facebook for participants of her cooking classes. If you are looking to start a new holiday cookie baking & decorating tradition and looking for a new spectacular cookie to add to your holiday cookie repertoire look no further! Consider registering for this virtual, live, family-fun Holiday Cookie Baking & Decorating Class for beginners. Gather your family for baking and decorating, or treat yourself to some quality personal fun time. Participants will be baking the cookies for the decorating ahead of time so that they are ready to decorate at the start of class. A PDF with two of the instructors’ personal sugar cookie recipes, and a list of ingredients and supplies needed for the Royal Icing will be provided 5—7 days before the class, to provide time for shopping and baking. The recipes will include a soft and chewy sugar cookie, and a denser crisp sugar cookie. One of the instructor’s favorite holiday cookie cutter shapes is a gingerbread person. This is one shape that proves to be a lot of fun to decorate year after year and some time will definitely be spent on this in addition to other holiday shapes.   • Driver Education

    Anoka-Hennepin Community Education has partnered with Safeway Driving School to provide an additional opportunity for high school students under the age of 18 to complete their classroom and behind-the-wheel instruction outside of the traditional school day. The classroom portion is held online via Zoom. Safeway’s only focus is creating safe, responsible teen drivers. Classroom and behind-the-wheel lessons emphasize defensive driving techniques tailored for the inexperienced teen driver while targeting to influence the invincible teen attitude. All of Safeway’s instructors are licensed by the Minnesota Dept. of Public Safety. The MN Department of Public Safety has approved a variance to State statutes that allows for teleconference driver’s ed instruction. This variance allows students to learn from home through virtual communication with a licensed instructor. The State of Minnesota requires that driver’s education distance learning be conducted in a face-to-face platform, which requires that students have a video camera and audio capabilities on their devices. Safeway has chosen a secure Zoom platform to conduct the class. Safeway will be emailing the classroom handouts and 2024 MN Driver’s Manual in pdf format for printing. Students will be required to be in front of the camera and interactive for the full three-hour class. Parents/guardians will be required to complete Safeway’s Account Verification. Safeway will be sending out an email before class begins that gives detailed information about how to login to the student’s Safeway account to verify and complete contact information and to review and acknowledge our Service Agreement. Classroom instruction prepares the student to take the Minnesota permit test and begin the responsibility of driving. The 30 hours of classroom is structured into 10 independent lessons. If a student misses a lesson, they can make up that exact lesson number at the next session or at one of Safeway’s other classroom locations. Students can take the class at age 14½ but cannot take their permit test until age 15. After class is completed, students who are 15 years old are eligible to take their permit test at any Minnesota exam center. The permit test is not providing during the class. Behind-the-wheel instruction includes six hours of driving in three, two-hour private lessons. All driving is done in a Safeway car on city streets, highways and freeways with a responsible, licensed Safeway instructor. Safeway recommends students take their first lesson 2-3 weeks after receiving their permit card and after 5 hours of practice driving. Students have one year after completing classroom to finish their behind-the-wheel lessons. Scheduling is offered online for 24/7 convenience. All of Safeway’s cars are white with identical graphics so parents and students are confident that it is a Safeway car picking up the student for a lesson. Students can get picked up for their behind-the-wheel lesson from home, school or work. Parent involvement is required to produce safe, responsible teen drivers. It is critical that parents practice regularly with their student drivers. The state requires that students have a minimum of 50 hours of practice (15 hours at night). The practice time must be recorded on a state-approved Supervised Driving Log and presented at the road test. Parent Classes are offered monthly at Safeway’s nearby classrooms. This class is not required but qualifies the parent to receive a certificate that allows their student reduced practice time (from 50 to 40 hours). At a minimum, Safeway strongly encourages parents to review its parent information and watch the online Parent Class Videos at www.safewaydrivingschool.com. Cost of the teen package is $410 and includes the classroom and behind-the-wheel lessons, and all materials. Pay in full upon registration or choose the payment plan: $245 payable to Community Education upon registration and $170 (two payments of $85 each) payable to Safeway at the behind-the-wheel lessons.

    Learn how fun and easy glass mosaic art can be while you create a table lamp or suncatcher. Look through the idea book, browse the patterns and stencils, and choose from dozens of colors of precut glass. The first evening will involve homework and the second evening will be grouting.
