Bring a ray of italian sunshine into your kitchen by creating homemade pasta using a few basic ingredients! You can mix by hand or food processor and we'll use pasta machines to roll and cut but also try out rolling and cutting by hand. We'll cover several recipe variations including spinach pasta. Savor your fresh sauces! We'll spend time making a meat sauce, tomato, gorgonzola and a quick alfredo sauce to accompany the pasta. With an extensive handout with tips and techniques, you can make the perfect pasta every time! Supply fee of $14 cash due to the instructor at class.



Eligible UCare members may receive an allowance to spend toward community education classes. Members must have UCare insurance at the time of registration. Limits and restrictions may apply. Contact UCare for further information.

Laurel Severson

Laurel Severson is a graduate of the University of Minnesota with a double major in Home Economics and Education. She has worked in businesses throughout her career focusing on food – beginning with editing a series of 12 international cookbooks, testing recipes, and editing a British cookbook. Laurel worked at 3M for 30 years supervising the executive dining room, a snack bar, employees buffet, conference dining rooms and the special events such as retirement parties and 25 year anniversary parties before transferring into hospital foodservice and then the hotel industry. Laurel currently works in many Community Education districts throughout the metro area teaching participation cooking classes. She has traveled extensively including living in the Philippines for one year and in London for two years. An avid collector of cookbooks, Laurel generously shares culinary tips with students. She entertains extensively in her 1882 home and is an energetic volunteer within her St. Paul community. For example, one volunteer project includes heading up the kitchen crew to feed 500 for a spaghetti supper fundraiser.
