Have you been looking for some tasty vegetarian options? Look no further! We'll create risotto with porcini mushrooms, tofu stroganoff, a hearty garbanzo bean and lentil soup. Along with this we'll make black-eyed peas with cabbage and cheese, chili with kidney beans and bulgur, quinoa salad with bell peppers and olives and the famous Nepali Dhal using lentils! Supply fee of $16 due to the instructor at class.

Laurel Severson is a graduate of the University of Minnesota with a double major in Home Economics and Education. She has worked in businesses throughout her career focusing on food – beginning with editing a series of 12 international cookbooks, testing recipes, and editing a British cookbook. Laurel worked at 3M for 30 years supervising the executive dining room, a snack bar, employees buffet, conference dining rooms and the special events such as retirement parties and 25 year anniversary parties before transferring into hospital foodservice and then the hotel industry. Laurel currently works in many Community Education districts throughout the metro area teaching participation cooking classes. She has traveled extensively including living in the Philippines for one year and in London for two years. An avid collector of cookbooks, Laurel generously shares culinary tips with students. She entertains extensively in her 1882 home and is an energetic volunteer within her St. Paul community. For example, one volunteer project includes heading up the kitchen crew to feed 500 for a spaghetti supper fundraiser.
