Join us in preparing a scrumptious feast! The menu includes Soupa Avgolemono, a lemon-flavored chicken soup, a flaming cheese appetizer, Saganaki, plus an eggplant appetizer. Zucchini with ground lamb is a wonderful variation from the better known eggplant dish. You'll also master spinach rolls in fillo and walnut cake with orange syrup! Supply fee of $17 cash paid to the instructor at class.



Eligible UCare members may receive an allowance to spend toward community education classes. Members must have UCare insurance at the time of registration. Limits and restrictions may apply. Contact UCare for further information.

Laurel Severson

Instructor

Laurel Severson is a graduate of the University of Minnesota with a double major in Home Economics and Education. She has worked in businesses throughout her career focusing on food – beginning with editing a series of 12 international cookbooks, testing recipes, and editing a British cookbook. Laurel worked at 3M for 30 years supervising the executive dining room, a snack bar, employees buffet, conference dining rooms and the special events such as retirement parties and 25 year anniversary parties before transferring into hospital foodservice and then the hotel industry. Laurel currently works in many Community Education districts throughout the metro area teaching participation cooking classes. She has traveled extensively including living in the Philippines for one year and in London for two years. An avid collector of cookbooks, Laurel generously shares culinary tips with students. She entertains extensively in her 1882 home and is an energetic volunteer within her St. Paul community. For example, one volunteer project includes heading up the kitchen crew to feed 500 for a spaghetti supper fundraiser.
